Mushrooms with ham (almost from Ferran Adria)

It's just amazing when a third ingredient is suddenly added to two often combined ingredients, which "wasn't there" - and suddenly such a beautiful and pure flavor combination turns out! I will not say "which no one has thought of except Ferran Adria"... But he thought of it - and made it public. For which I thank him very much.

    1. If you use champignons (and decent-looking unmarked white ones, for example, also apply) - do not wash them, but clean them from dirt with a brush or a dry cloth - this allows you to preserve the aroma of the mushroom and prevent it from gaining water when washing.

    2. Cut the mushrooms, in our case, these are champignons.

    3. Heat high-grade olive oil in a frying pan and fry bacon or ham in it.

    4. Turn down the heat, pour in the sherry and toss the mushrooms. It took the champignons there a very little, literally a couple of minutes, it will be the same with white ones, other types of wild mushrooms may have a longer cooking time. Season with fresh parsley and pepper.

To be honest, I didn't have the Spanish jamon that the great Adria chose for his purposes, and I absolutely have nowhere to take him. As, I think, most of those present. So I made it out of the most ordinary bacon that you can buy, I think, everywhere. And I didn't have any different mushrooms either (winter because), I took brown champignons - the most vigorous to taste of everything available to me. It will certainly be better with the forest ones. But even with all the substitutions, it still turned out very tasty!
