I make minced meat from pork pulp, which I scroll twice in a meat grinder. I soak the bread in water, squeeze it out, mix it with minced pork, butter and water. I salt all this and scroll through it in a meat grinder. I make small round or oval cutlets from minced meat. I put the cutlets on a stainless steel steamer and cook over a steamed saucepan until ready. Meanwhile, I'm doing milk sauce. Lightly fry the flour in butter, put it in a saucepan, pour hot milk and salt and boil for a little more than five minutes. I cook potatoes and make mashed potatoes with the addition of eggs and milk. I put the cutlets on a baking sheet, put a puree between them with a pastry syringe, pour milk sauce over it all and bake it for a short time in a preheated oven at a moderate temperature. It turns out quite tasty and quite unusual: a cross between steamed and ordinary fried chopped cutlets. A culinary recipe for pork cutlets with milk sauce came across to me in a set of postcards with images of various food for the festive table. I immediately rewrote it, and then repeatedly prepared it. It's good that I remembered about them, I should make them again, because the last time I ate cutlets with milk sauce for a very, very long time, almost six months ago.
