My friend recently went to China for a vacation. There she liked Chinese cuisine the most. Upon arrival, she showed us what she had learned by visiting Chinese restaurants. Next, she made marinades for meat and fish separately. She made the marinade for pork from sesame oil, Peking. Beef marinade (barbecue sauce, Sechuan pepper to taste and sesame oil.). To the chicken (oyster sauce and light soy sauce). Then she mixed all the meat in one bowl and put it in the refrigerator for 2 hours. After that, I crushed the chili pepper, ginger and garlic and put everything in a mortar. I added palm sugar, fish sauce and lime juice. I added salt, peanut butter, white sugar and finely chopped coriander to the fish. Shrimp marinated in finely chopped shallots, lemongrass and ginger. To make the broth, she poured water into two different pots and added chopped ginger, peeled lemongrass stalk, garlic head cut in half and shallots and put on high heat for 30 minutes.
