To prepare eggplant caviar at home, choose dense, mature, healthy vegetables. Rinse them thoroughly with running water. Eggplants should be cut into circles 1.5 – 2 cm thick, carrots and roots should be cut into strips. Onions - plates no more than 0.5 cm .
We fry the prepared vegetables in sunflower oil so that the eggplants and onions get a golden color, and the carrots and the white root become soft.
We remove the stalk from tomatoes, pass them through a meat grinder or chop them with a knife, and then cook them to half of the original volume.
Vegetables fried in sunflower oil are passed through a meat grinder, add boiled tomatoes, sugar, salt, finely chopped herbs and spices to them. All this is thoroughly mixed, the mixture is heated to a temperature of 70 degrees, stirring constantly. The resulting mass is placed in hot sterilized jars, and rolled up with lids.
