Kefir tortillas in the oven without yeast

Taste these products and you will cook them often. If there is no bread in the house for lunch or dinner, you do not need to immediately run to the store. After all, if you have an hour in stock, then you can cook delicious homemade tortillas, which you can use instead of bread.

    Prepare all the necessary ingredients. Kefir should be at room temperature, so it should be poured into a glass in advance (about 1 hour) and left to heat up in the kitchen. Take flour only of the highest grade.

    Pour kefir at room temperature into a bowl. Pour in the soda and mix. Leave the mixture for 2-3 minutes until a lush air foam and many small bubbles appear on the surface. This means that the alkali has reacted with lactic acid. Important! Soda plays an important role in this recipe. Since the tortillas are yeast-free, but carbon dioxide is required to make the tortillas lush, then soda is necessary here and slightly palpable to the taste.

    In a bowl with kefir, sift the flour and salt in parts. It is not necessary to sift the entire volume of flour at once, since it may need more or less depending on the fat content of kefir and the quality of the flour itself. I had to add another 1 tbsp. l. with a mound of flour in the process of kneading the dough. First, stir the dough with a spoon. It will bubble up a lot when mixed. That's the way it should be.

    As the dough thickens, continue to knead it with your hands, if necessary, adding a little extra flour. The dough should be elastic, slightly sticky.

    Wrap the dough in plastic wrap and leave it at room temperature for 30 minutes to rest.

    Divide the dough into 4 parts. Roll out each part on a floured surface or stretch it with your hands and form round cakes. Tortillas can be small in diameter, but thick or thin, but larger in diameter. I preferred to roll out thinner, because I associate thick small products with cakes, and tortillas in my understanding are products of a larger diameter.

    Transfer the tortillas to a baking sheet lined with parchment and brush with clean drinking water.

    Sprinkle sesame seeds on top of the tortillas. I used a mixture of white and black sesame. Place the bread cakes in a preheated 180 ° C oven and bake, depending on the thickness, for 12-20 minutes. Focus on the features of your oven. If the tortillas are rolled out thinly, they will be ready in about 12-15 minutes. Thicker products should be kept in the oven for up to 20 minutes. The main criterion is the golden color on the surface.

    Grease the finished tortillas with vegetable oil immediately after the oven. A harsh crust appears on the tortillas, which softens when it absorbs the oil. The tortillas immediately become soft. Put the finished hot tortillas on top of each other and immediately serve to the table. Bon appetit!

Be prepared for the fact that you may need more or less flour than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!
