    How to make puff pastry volovans? Prepare all the necessary products. Use fresh or canned champignons, in both cases it turns out very tasty. Remove the finished puff pastry from the refrigerator.

    Spread out the dough layer on the table, if necessary, roll it out slightly. Make puff pastry circles with a special round notch. If there is no suitable shape, then use a glass, a wine glass or a shot glass.

    Cut out rings from half of the circles using a mold or a glass with a smaller diameter.

    So you should have an equal number of circles and rings.

    Wash the egg well, separate the white from the yolk, whisk the white lightly. Place the circles on a baking sheet covered with baking paper. Use a silicone brush to lubricate them with protein.

    Send sour cream to the mushrooms, mix and cook until thickened.

The diameter of the circles for the volovans can be made any, according to your desire. I usually make circles of 5-6 cm in diameter, or 2 times smaller.
Little volovans are especially liked by children.

Instead of fresh, you can take frozen or dried mushrooms (dried ones will need 5-6 times less than fresh ones). Frozen mushrooms can be defrosted in any convenient way (for example, in the microwave in the appropriate mode - see the instructions for your technique) and drain the liquid. Or, if the amount of liquid in the recipe is not critical, use without defrosting. Dried mushrooms should be washed well, since they are not washed before drying, and then soaked in cold water for at least 2-3 hours.

Buy fresh medium-sized mushrooms, snow-white color without spots, damage, rot smell. They should not be slippery to the touch. Thoroughly rinse the mushrooms from the ground under a stream of warm or cold water. Cut out the damaged places, if there are any. Miniature mushrooms up to 2 cm in size do not need to be cleaned at all, it is enough to rinse them well. Larger champignons are recommended to be cleaned from films.
