Next, you need to deal directly with the fish. If it is frozen, then it should be removed from the freezer beforehand and thawed at room temperature. If you are lucky enough to buy a fresh capelin, then first of all it needs to be cleaned, gutted all the insides and remove the heads. Then thoroughly rinse the fish carcasses under running water and spread them on a paper towel to drain excess moisture.

Spread the capelin on a large platter or cutting board, and then season with salt and freshly ground black pepper to taste.

Peel and wash the onion. And then cut it first in half rings, and then again in half.

A baking dish with high sides should be liberally greased with vegetable oil. Place the chopped onion evenly on the bottom of the mold. The onion layer will serve as a kind of pillow for the fish and will not let it burn or stick to the bottom. In addition, onion rings will let the juice and soak the capelin, giving it an appetizing aroma and mild taste.

Put the seasoned capelin on top of the onion pillow in even layers.

Take sour cream of any fat content and use a spoon or a special cooking brush to distribute it over the top layer of capelin, trying to lubricate each piece.

Put the baking dish with capelin in the preheated oven for 20-25 minutes, depending on the size of capelin.

As soon as the fish is browned and covered with a golden crust, get the baking dish out of the oven. Garnish the baked capelin with onions with fresh chopped herbs and serve immediately.
