    To prepare this gooseberry jam, only gooseberry berries and appropriate utensils are required: a saucepan with a thick bottom, a cotton towel, small jars with a lid. The jars must first be well rinsed and sterilized. Gooseberries can be taken any, according to availability and taste: green or red. I wash it well, we cut off the tassels and tails. Even in winter, you can cook this delicacy if there is a gooseberry freeze.

    Jam will be prepared by boiling, without sugar and any additives. Although you can add lemon or orange, it will give a pleasant citrus note to the jam. We defrost it and cook jam in the same way. Pour water into a saucepan, put a cotton towel on the bottom. Glass jars are filled with gooseberry berries up to the shoulders of the jars. The water in the pan should reach the shoulders of the cans so that the water does not pour into the jars with berries when boiling

    Turn on the fire, bring the water to a boil, cook on high heat for about 30 minutes. Turn down the heat and cook over low heat for about 1 hour. The berries will let the juice and boil.

    As the berries boil and settle, we transfer them to one jar, and pour a fresh batch of berries into the others. We take the first jar of ready-made jam out of the pan and roll it up with a sterilized lid. We also do with other jars when the jam is cooked. It is better to take small jars so that after opening, you can quickly use jam.

    Turn the jars upside down, wrap with a towel and leave overnight to cool at room temperature. Then we store the jam in the refrigerator or another cool place.
