    How to make a salad with white beans, canned cucumber and chicken? For this recipe, you need a seasoning called zaatar - a mixture of fried sesame seeds with dried herbs and salt. This seasoning is not everywhere you can buy, but it is absolutely easy to cook at home. To begin with, dry the sesame seeds in a dry frying pan until golden brown.

    Mix sesame seeds, sumac, dried herbs (thyme, oregano) and salt. Rub the resulting mixture in a mortar with a pestle or grind for a few seconds in a coffee grinder. You will get a fragrant sour-salty mixture of spices.

    Now prepare the main ingredients for the salad. Drain the liquid from the white canned beans, dry the beans. Remove the zest from the lemon and squeeze out the juice.

    Pre-boil chicken fillet in salted water and cut into small pieces.

    Wash and dry the vegetables and herbs. Cut the cherry tomatoes in half.

    Cut the cucumber into cubes or quarters. The skin, if it is not rough, not damaged and not bitter, does not need to be cut off.

    Chop the parsley, mint and green onion. At the same time, pre-tear the mint from the twigs so that only tender leaves remain. If you don't have mint, fresh basil is an ideal substitute.

    In a bowl, combine the white beans, chicken fillet, cucumbers, cherry tomatoes and chopped greens.

    Add olive oil, lemon juice, zest and 1 tbsp zaatar. If desired, add salt, pepper and season with ground chili pepper. I did not additionally salt or pepper the salad - zaatar was enough for my taste (sumac tastes spicy). If you do not have the opportunity to cook / buy zaatar, you can simply sprinkle the salad with Provencal herbs, salt and pepper.

    Mix everything carefully and let the salad stand for 30 minutes.

If desired, this salad can be prepared in the evening and kept in the refrigerator under the lid to enjoy its rich taste in the morning.

You can also make this salad from boiled white beans. It needs to be soaked in water overnight, and then boiled according to the instructions on the package until ready (usually it takes from 1 to 1.5 hours). Then put the beans in a colander and let the water drain.

The salad will look nice and neat if you cut all the ingredients into pieces of the same size and shape (for example, cubes).
