    How to make a classic Bulgarian Shop salad? Prepare the products necessary for the preparation of the salad. You will need fresh vegetables: tomatoes, cucumbers, salad onions (I used white), sweet Bulgarian pepper (preferably red, fleshy), as well as a little cheese, parsley to taste and vegetable oil for dressing (it's good if it's olive). To decorate the salad, use olives or olives.

    Wash the bell pepper, wrap it in foil and bake in the oven at 180 degrees for about an hour (you can do this together with baking or baking other products). Check readiness with a narrow sharp knife - the pepper should be completely soft. Allow it to cool completely to room temperature without unwrapping. Under the influence of steam, the skin will easily separate.

    Wash the tomatoes, remove the stalk and cut the pulp into medium-sized slices. Place in one layer on a flat plate.

    Grate the cheese on a fine grater. Put the chopped cheese on the vegetables with a neat "cap". Rinse the parsley, shake, chop finely and put it on the edge of the plate. Garnish the classic Bulgarian Shop salad with olives (or olives). They can be put whole or cut into halves.

If it is not possible for one reason or another to bake Bulgarian pepper, then use fresh.
It is better to pour boiling water over ordinary onions before adding them to the salad to remove the sharp taste. It can also be pickled.

How to choose the right olives? It is better to buy the product in a transparent package. So you can see their appearance and color. If the olives are too black, then food dyes have been added. The fruits should be elastic, whole, with a smooth, shiny skin. Too soft, overripe olives will not be stored for a long time.

Choose juicy tomatoes, but dense. Soft fruits do not keep their shape well, in the process of slicing and cooking they will spread into a shapeless mass and spoil the appearance of the dish.
