This gingerbread turns out delicious, with a slightly moist texture and homely. Pie is easy to cook and from simple products. You can take any jam for making gingerbread, even the old one, which you no longer want to eat yourself. But the main condition is that you should like the taste of jam, since jam is very noticeable in the finished cake, so it is unlikely to disguise the unloved jam in it.

    Add kefir, jam to the bowl (by the way, if it is very dense, then you can also warm it up a little so that it becomes a little thinner), as well as melted butter.

    Add baking soda and cinnamon to the flour. Sift it in portions and add it to the dough. Flour may need more or less. Focus on the desired consistency of the dough.

    Mix. You should get a smooth and tender dough. In terms of density, it should resemble the dough for pancakes, so if you suddenly have liquid jam, then you may need to add another 50-80 g of flour.

    Put the dough into a mold. For baking, you can use any suitable mold, it is desirable that its diameter is about 24 cm at least, so that the dough level is not too high. I used a cupcake mold for baking, its diameter is about 23 cm. Pre-lubricate the mold with oil or cover with baking paper.

    Bake the cake at 170-180 C for about 45 minutes, the time will depend on the height of the pie. Check readiness with a skewer.

How to melt butter in a water bath? You will need two containers of different diameters. Pour water into a large one and put it on the stove. Place the smaller container on top so that it is submerged in water by about half. Put the sliced butter into it. Under the influence of boiling water, the oil will begin to melt. Stir the oil slightly to speed up the process. As soon as the pieces of oil are completely dissolved, remove the container from the stove.
