Step-by-step cooking

Cooking time: 1H
  1. Step 1:

    Step 1.

How to make a cake with sour cream and condensed milk? First of all, prepare a biscuit. Prepare the products for him. How to make a biscuit? Take a bowl, break the eggs into it. Add sugar. Beat eggs with sugar with a mixer until fluffy light mass. Add sour cream, choose natural, high-quality, without vegetable fats. Fat content is better let it be from 20% and higher.

  2. Step 2:

    Step 2.

Then add condensed milk. Choose high-quality, proven condensed milk. Without vegetable fats and food additives. The composition should contain only two ingredients: milk and sugar. As a result, the taste and quality of the finished dish will depend on the quality of condensed milk. Mix the egg mixture until smooth, this can be done not with a mixer, but with a spatula. Take soda, don't be afraid of a large amount — the dough turns out to be heavy, soda is needed to lift it.

  3. Step 3:

    Step 3.

Pour the soda with lemon juice or table vinegar. As a result, a reaction will occur between acid and alkali, with the release of carbon dioxide, it is he who will give splendor to the biscuit. Pour the slaked soda into the dough and mix.

  4. Step 4:

    Step 4.

Sift flour and cocoa into the dough. Sifting will not only remove possible debris, but also enrich the products with oxygen, which will make the biscuit more lush and airy. Take natural cocoa, without additives, a drink like Nesquik will not work.

  5. Step 5:

    Step 5.

Mix the dough well until smooth.

  6. Step 6:

    Step 6.

Cover the 24 cm form with baking paper. You can divide the dough into 3 parts and bake three cakes. I baked one.

  7. Step 7:

    Step 7.

Put the dough form in a preheated 180 degree oven for 40-45 minutes. Check readiness with a toothpick — if it comes out of the middle dry, the biscuit is ready.

  8. Step 8:

    Step 8.

Let the biscuit cool completely. Next, cut off the top of it a little. And in the future, use the biscuit in an inverted form. The bottom is always smoother, and therefore will be on top.

  9. Step 9:

    Step 9.

While the biscuit is baking and cooling, prepare the cream. How to make a cream? Prepare the products. Choose natural cream, maximum fat content, 33%. Tips on how to work with them, read at the end of the recipe. Take cottage cheese without additives. Whisk the cream to peaks. Add cottage cheese and condensed milk. Whisk everything again. There is a lot of cream, so you can take half a serving.

  10. Step 10:

    Step 10.

Cut the biscuit into 3 parts. Try to make smooth cakes, I cut them with a thread. I make incisions with a knife-saw, and then I stretch the thread from both sides. Make the impregnation. How to make impregnation? Mix hot water with sugar and any liqueur. If the cake will be eaten by children, then replace the liqueur with syrup or jam. Let the impregnation cool down.

  11. Step 11:

    Step 11.

Assemble the cake. Put the cake on a platter. As I said, we put the top of the biscuit on the bottom. Soak it by watering it with a few spoonfuls of impregnation. Smear the cake with cream.

  12. Step 12:

    Step 12.

Do the same with other cakes.

  13. Step 13:

    Step 13.

When the cake is assembled, coat it with cream on all sides. Do not spare the cream, the cake should turn white.

  14. Step 14:

    Step 14.

Decorate the cake to your liking and put it in the refrigerator overnight.

  15. Step 15:

    Step 15.

    Bon appetit!

How to whip cream properly? It is important that the cream is fat, at least 33%. The whipping dishes and the cream themselves should be cold, keep them in the refrigerator for at least 1-2 hours. Beat with a mixer at minimum speed, gradually increasing the speed. How do I know if the cream is whipped enough? The creamy mass should retain its shape and not spread. At this point, stop whipping. Otherwise, the cream will turn into butter.
