    The preparation of the pie began with the separation of proteins from yolks. Then she grated the orange peel on a fine grater. I mixed the yolks with brown sugar (150 g), freshly squeezed orange juice 260 ml (approximately 4 oranges), vanilla sugar, zest and odorless vegetable oil and thoroughly whipped until smooth. Then, flour with baking powder was sifted into the resulting mixture and mixed until a homogeneous mass was obtained.

    In a separate container, I whipped egg whites with a pinch of salt until an airy dense mass was obtained, gradually added white sugar and whipped until the granulated sugar dissolved.

    I added about a third of the protein mixture to the orange dough and mixed it until a homogeneous mass was obtained. Then I added the remaining proteins and gently mixed until smooth. I poured the resulting dough into a prepared baking dish, greased with oil. I didn't cover the form with parchment, I have a non-stick mold. Lightly stirred to release random air bubbles.

    Placed the mold in the oven, preheated to 180 °, and baked for about 40-45 minutes. But everyone has different ovens, so you need to focus on your own. The readiness of the pie was checked with a wooden skewer, when it came out dry and clean – the pie was ready. I melted 72% dark chocolate in the microwave and poured the cooled cake. Decorated the top with orange slices and rosemary sprigs.

I baked the pie in a split cake mold, I wanted it to look a little like a Christmas wreath, but you can bake it in a regular form. By the way, the diameter of my mold is 28. Consider this when baking. The pie turns out to be quite large.
I poured melted dark chocolate over the pie, but you can make a glaze based on powdered sugar and orange juice, the pie will get a slightly different taste, but this will make it no less delicious.
The advantage of this pie is that there are no dairy products in it, so people with lactose intolerance can safely eat, it is also suitable for baking during the period of not strictly fasting.
