    Beat in the egg. Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.

    Next, pour in water at room temperature (this is an important point — the gluten contained in flour, which is responsible for elasticity, will develop faster in warm water). Knead the dough.

    If the dough sticks slightly to your hands, add a little flour. Or vice versa, if the dough is still crumbling, pour in some more water. Flour is different for everyone and the volume of water is also different. Therefore, look at the consistency of the dough. It should become homogeneous, smooth and elastic. Wrap the dumpling dough in plastic wrap and leave to rest for 20-30 minutes.

    Meanwhile, do the stuffing. How to make the filling? To prepare the filling, I took chicken fillet, but if there is no time, you can take the purchased minced meat. Pass the chicken fillet through a meat grinder or chop it in a blender. Peel the onion, also pass through a meat grinder or blender, add to the minced meat, season with salt and pepper. If desired, you can add 1-2 cloves of garlic to the minced meat. Mix well. The filling is ready.

    Roll out the dough with a rolling pin into a thin layer. Using a glass, cut out circles from the dough. Knead the remaining dough well again and roll it out again.

    Roll up the resulting "pie" and blind the corners. Make dumplings from the whole dough in the same way. Put the finished dumplings with minced chicken on a floured surface. In this form, the dumplings can be frozen.

    Cook the dumplings in plenty of water. Bring the water to a boil, add salt, if desired, you can add bay leaf. Gently lower the dumplings into boiling water. I advise you to lower the dumplings one piece at a time and stir constantly so that they do not stick together. Cook homemade dumplings with chicken for about 10-15 minutes from the moment of boiling. Then carefully remove it with a slotted spoon. Serve with broth or sauces. Bon appetit!

For cooking, it is better to use filtered or bottled water that is neutral in taste. If you use tap water, keep in mind that it can give the dish an unpleasant characteristic taste.
