Step-by-step cooking

Cooking time: 1 h 30 min
  1. Step 1:

    Step 1.

How to make lean potato zrazy with mushrooms? Prepare the necessary products. Take odorless vegetable oil.

  2. Step 2:

    Step 2.

Pre-washed and peeled potatoes cook in salted water until tender.

  3. Step 3:

    Step 3.

Drain the water. With the help of a pusher, turn the boiled potatoes into a homogeneous mass without lumps. Cool the mashed potatoes.

  4. Step 4:

    Step 4.

Champignons are good for filling. If you use forest mushrooms, then they must first be boiled in salted water. Wash the champignons, dry them. Cut the mushrooms into small cubes.

  5. Step 5:

    Step 5.

Pre-peeled onions also cut into small cubes.

  6. Step 6:

    Step 6.

Fry the onion in a frying pan for 5 minutes, stirring occasionally. Put the prepared champignons in a frying pan with the onion. Fry the mushrooms, stirring, until tender. In the middle of cooking, add salt to the mushrooms.

  7. Step 7:

    Step 7.

Add flour and 2 tablespoons of vegetable oil to the cooled potato mass. Mix well. Leave the potato mass for 10 minutes. During this time, the flour will swell, and the mass will become more viscous.

  8. Step 8:

    Step 8.

It was convenient for me to form zrazy using a food film. Lay out a portion of potato dough in the form of a tortilla, smooth it out.

  9. Step 9:

    Step 9.

Put about 1-1.5 tablespoons of mushroom filling in the middle of the tortilla.

  10. Step 10:

    Step 10.

Using a food film, lift and connect the edges of the tortilla, as if forming a pie.

  11. Step 11:

    Step 11.

Do all the zrazy in this way.

  12. Step 12:

    Step 12.

On a small plate with sides, pour the breadcrumbs. Roll each zraza from all sides in breadcrumbs.

  13. Step 13:

    Step 13.

Heat the vegetable oil in a frying pan. Put the prepared zrazy in a frying pan. Fry the zrazy over medium heat until golden brown.

  14. Step 14:

    Step 14.

Then turn the zrazy to the other side and fry until tender.

  15. Step 15:

    Step 15.

Serve lean potato zrazy with mushrooms hot. Enjoy your meal!

Instead of fresh, you can take frozen or dried mushrooms (dried ones will need 5-6 times less than fresh ones). Frozen mushrooms can be defrosted in any convenient way (for example, in the microwave in the appropriate mode - see the instructions for your technique) and drain the liquid. Or, if the amount of liquid in the recipe is not critical, use without defrosting. Dried mushrooms should be washed well, since they are not washed before drying, and then soaked in cold water for at least 2-3 hours.

Any oils are useful only until a certain temperature is reached - the point of smoking, at which the oil begins to burn and toxic substances, including carcinogens, are formed in it. How to determine the roasting temperature and choose the best oil for frying, and which is better not to use at all, read here.

Important! An incorrectly selected frying pan can ruin even the best recipe. All the details on how to choose the perfect frying pan for different dishes read here .
