1. Catfish is well washed under cold water. We clean the insides, cut off the fins, tail and head. Cut in half lengthwise, in order to get the ridge and large bones. Fillet peeled from the bones, cut into squares of about 4 cm. If the catfish is large, the pieces can be made thicker.
2. We put the catfish fillets in enameled dishes, sprinkling with coarse salt. It is better to use non-iodized salt.
