Georgian summer wine and garlic salad

A simple, delicious salad is just a storehouse of vitamins! When they just start selling young garlic, I rush to the market and immediately buy several bunches. Where I just don't use it: in borscht and salads and just eat with meat dishes. One day, when my imagination was exhausted and the cookbook did not suggest fresh ideas, I caught sight of a piece of newspaper in which it was wrapped... no, not young garlic, it would be too much like a fairy tale, but a bunch of dill for preservation. There, between the weather forecast and the editorial office's phones, there were several short culinary recipes, among which there was a Georgian summer wine and garlic salad. "Georgian and wine is fine, it's summer, it doesn't let you forget the thermometer and the hot sun, and I still have nowhere to put garlic," I thought. And immediately started cooking.

Peeled the young garlic and cut it into strips. Then he put it in a salad bowl, poured salted boiling water. Literally five minutes later, I drained the liquid through a colander. I mixed vinegar, wine, vegetable oil and slightly salted the dressing, and then poured it over the soft scalded garlic. I let it cool down well, and then put it in the refrigerator for an hour.

Since yesterday I still had a piece of cold boiled chicken. So it just turned out to be useful when I ate the whole plate of salad without even inviting anyone to share a meal with me. But in the future, many people had a chance to try my Georgian summer wine and garlic salad and no one remained indifferent. Anything can be combined with such food - spicy cheese, cold meat, boiled pork or boiled lamb. But it is best to serve it outdoors with homemade sausages cooked on the grill. It will not work to replace the young garlic with the old one, it is not even worth trying.
