Cut off the top of the sponge cake. To do this, it is better to use a long knife that will freely reach from the edge to the edge of the cake, so you will get an even cut. On the underside, outline the oval of the face with a toothpick.

    Cut the sponge cake with a sharp knife along the designated contour.

    Turn over and place the sponge cake base on the cake stand. Cut the top edge of the biscuit in a circle.

    Suitable creams for mastic oil, caramel, condensed milk or chocolate ganache. It is not recommended to use sour cream, as the mastic will float from moisture and will not be able to maintain its shape. Add the blue dye to the cream and stir. Butter the cake.

    Make an elevation from the cream to the middle of the cake. Smooth it well so that the surface is smooth. To impregnate the cake with cream, you can put it in the refrigerator for several hours, or preferably overnight. To make the dessert look neat, be sure to check the evenness again before applying the mastic, since the mastic will not be able to hide the roughness.

    Put the mass on a work surface sprinkled with powdered sugar (it is good to use a silicone mat). Knead until the mastic stops sticking to your hands. From the warmth of the hands, it will become elastic and obedient. Roll out the thin white mastic into a thin pancake (approximate thickness 3-4 mm).

    Wrap the rolled layer on a rolling pin and transfer it to the cake, smooth it out. Trim off the excess edges. If bubbles appear on the surface, simply lift the edge of the mastic layer and gently lay it again.

Assemble it into a ball, sprinkle with powdered sugar, wrap it in a bag or plastic wrap and send it to the refrigerator for 30 minutes. After half an hour, you can start rolling. It is important to use high-quality powdered sugar without grains, otherwise the layer of mastic will tear.

To make the cake shine beautifully, lubricate the surface with vodka and leave for 20 minutes. During this time, the alcohol will fade, and the product will acquire a spectacular shine.

If you use dry dyes, dissolve them according to the instructions in vodka, then the surface will be glossy or in water, then the cake will get a matte appearance. Liquid, gel dyes do not need to be pre-dissolved with anything.

You can apply the paint with a regular gouache brush, a spray gun, a pastry syringe. The amount of dye will depend on what color saturation you want to achieve.
