    You will need only two ingredients to make apricot jam.These are, directly, apricots and sugar themselves. Take apricots as ripe as possible. They are sweeter, more fragrant and tastier. Choose fruits without damage. Wash the apricots themselves well in running water to wash off dust and dirt from them.

    Divide each apricot into two halves and remove the stone from it. You can leave the apricots in halves, or you can cut each half in half. I divided the apricots into quarters. Put the chopped apricots in the dish in which they will be cooked. You can use an enameled or glass pan for this. Just do not use aluminum cookware to avoid oxidation reactions with fruit juice.

    Fill the sliced apricots with sugar and trot the pan a little so that the sugar is distributed most evenly. It is not necessary to pour all the sugar at once. If apricots are sweet, then you may need less sugar. If there is not enough sweetness, then it will be possible to fill up later. Cover the apricots with sugar with a lid and leave for a few hours so that they let the juice. I usually leave it overnight.

    After a few hours, a lot of juice will appear. Now put the pan on the fire and bring everything together to a boil. Taste it. If there is not enough sweetness, then you can add more sugar.

    Boil the apricots for 5 minutes over low heat. If foam forms during cooking, it must be removed. You won't need it. Despite the fact that the jam is cooked for only 5 minutes, the apricots have time to boil a little.

    Prepare suitable jars for jam. Wash them well and rinse them. Sterilize the jars in a way that is convenient for you. This can be done in the oven, in the microwave or over hot steam. Just pour boiling water over the lids.

    Pour the hot jam into the prepared dishes and close the lids. Turn the jar over and check for tightness. Wrap the inverted jars in a warm blanket and leave them to cool completely. Why wrap it in a warm blanket? In the wrapped form, the jam remains hot for a long time, which means it will still reach during the cooling process. During this time, it will become even thicker.
