Chop onion, carrot and celery coarsely, put in a mold.

Add thyme, then sprinkle everything with olive oil, mix.

Season the meat with salt and pepper.

Grease it with mustard on both sides and put it on vegetables.

Preheat the oven to 180 degrees, bake meat with vegetables for 1 hour 20 minutes.

Transfer the finished roast beef to a plate and cover with foil.

The broth that formed during baking, use for sauce.

Remove the vegetables and pour the broth into a frying pan. Reheat.

Add flour, stirring, let it boil for two minutes.

Pour in the wine, put the vegetables, reduce the heat, cook for another 6-8 minutes.

Strain the sauce.

Serve roast beef, sprinkled with this sauce, together with yorkshire pudding .
