Cut the beef into small long pieces, as in azu.



Cut onion into cubes.

Grate carrots.



Cut eggplant and zucchini into large cubes.

Sweet pepper cut into cubes.



Cut cucumbers into small cubes.

Cherry tomatoes cut into four pieces.



Pour vegetable oil into the cauldron and put it on high heat. 

Fry the meat until the juice becomes transparent.



Add onion, fry.

Add carrots, fry.



Add spices for meat. Add a little salt and pepper.

Mix the chopped vegetables and put them in a cauldron.



Keep the fire to a minimum.

Cover the cauldron with a lid and leave for an hour.



Mix meat with vegetables. 

If necessary, season the dish with salt and pepper.



Add finely chopped garlic and cilantro.

Cover the cauldron and leave for another 10 minutes.



Turn off the fire.

Let the dish brew and you can serve.



You need to eat basma with a flatbread, dipping it into a broth of vegetable juice.
