    Prepare the ingredients for sea buckthorn compote. In addition to sea buckthorn, you can use other berries and fruits, for example, lemon for a pleasant sourness. But we will prepare a simple classic compote from frozen sea buckthorn, without additives.

    Sea buckthorn is thawed at room temperature, natural defrosting does not allow useful substances to evaporate from the berries. If you defrost sea buckthorn in a microwave oven, it will lose its appearance and some vitamins. If the berries were sorted and washed before freezing, then it remains only to wait for them to thaw. Otherwise, the berries need to be carefully washed and sorted so as not to crumple them.

    Pour clean filtered water into a saucepan or metal cup made of non-oxidizing material, bring it to a boil. Add the sugar, mix so that it completely dissolves.

    And only then we lower the sea buckthorn berries into the syrup. This sequence allows you to preserve most of the vitamins in the berry, since sea buckthorn is already lowered into hot water and does not cook in syrup for a long time.

    Boil the compote over medium heat for about 10 minutes, stirring occasionally. The compote is ready. Turn off the fire. We let it stand under the lid for about 15 minutes and serve it to the table, with cookies or buns, or just as a vitamin drink.
