A great option for universal baking for fasting. Lean potato cookies are obtained with a crispy crust and a tender middle. This dish is absolutely universal: you can eat it just like that, you can serve it with tea, or you can also serve it with the first courses. The advantage of the recipe is that the products for cookies need the most ordinary, budget, and it is prepared very simply and quite quickly.

Of course, the first thing you need to do is to make mashed potatoes. We do it as usual. Potatoes need to be washed, cleaned, then boiled until tender in slightly salted water, and then ground into a puree with a special pestle. Allow the mass to cool down to a comfortable hand temperature.

If you want to achieve a more piquant taste and aroma, then during cooking you can add spices to the potatoes to choose from: a small onion, a couple of garlic cloves, bay leaf or fragrant roots (carrots, parsley, parsnips). It perfectly absorbs and preserves the flavors of the "companions".

But it's better to start with potatoes without additives, gradually introducing "branded" flavors. By the way, mashed potatoes for cookies can be used left over from yesterday's dinner. In total, you need a puree in the amount of 300 grams.

So, in the puree to taste, you need to add salt, ground black pepper, dry spices - any favorite seasonings. Mix everything until smooth.

Add vegetable oil, flour to the mass and knead the dough. It should turn out to be quite soft and plastic, but not stick to your hands.

If the dough turns out to be runny or sticks to your hands, you need to add a little more flour.

Divide the finished dough into 2-4 parts. From each to form a thick cake. Stack all the tortillas so that they do not dry out.

Roll out the tortillas in turn into layers about 5 mm thick. Cut cookies with a cookie cutter.

Cover the bottom of the baking tray with a special mat or baking paper. Lay out the cookies. Lightly lubricate the top with vegetable oil. If desired, you can sprinkle, for example, with herbs.

Preheat the oven to 200 degrees in advance. We put the baking tray in the oven, 12-15 minutes of baking and everything - delicious potato cookies are ready!
