Cabbage soup is a traditional Russian dish that certainly contains cabbage. Cabbage soup is prepared in every family and there are many recipes for this magnificent soup. Today I suggest you cook original cabbage soup with Peking cabbage. Until I tried it myself, I doubted it would be delicious. Now these cabbage soup are included in the diet of our family.

We will cook cabbage soup in broth from pork ribs, but they can be replaced with any other meat.

Let's start cooking soup with cooking broth. To do this, pour the necessary amount of water into a saucepan and, covered with a lid, bring to a boil.

Add a little salt to the water. We lower the pork ribs into boiling salted water. You can add ribs to cold water and then boil them together, but then more foam is formed. Collect the noise from the broth and reduce the temperature under the pan. Cook for 30 minutes under the lid over medium heat.

Finely chop the onion and carrot. Pour vegetable oil into a heated frying pan, pour out chopped onions and carrots. Fry for 5 minutes, stirring occasionally.

When the onion turns yellow and the carrot starts to juice, add tomato paste to the pan. Instead of tomato paste, you can use sliced tomatoes. Add a little salt and pepper. Stir and leave to simmer all together for another 10 minutes on low heat. It is better to cover the pan with a lid.

We take the ribs out of the pan with broth. Carefully, so as not to get burned, cut off the meat from the ribs. After grinding, we return it to the pan.

Cut the peeled potatoes into cubes and add to the broth.

After 10 minutes, we send stewed onions and carrots into a pot with soup. Cook for another 10 minutes.

Finely chop the cabbage. Peking cabbage is very tender, so you don't need to cook it for a long time. 5 minutes before cooking, we lower the chopped Peking cabbage into the pan.

Salt, add pepper and bay leaf. You can add your favorite spices.

Ready-made cabbage soup with Peking cabbage is served hot with herbs and sour cream. But there are fans of cold cabbage soup.
