    How to cook soup from the head of a red fish? Remove the head from the freezer and leave at room temperature until thawed. You can fill the fish with cool water, so the defrosting process will happen faster. Remove the gills and remnants of scales, if any. Fins, tails, bellies, etc. are suitable for soup. Rinse your head, send it to a saucepan and fill it with water. Bring to a boil over high heat, remove the foam, reduce the flame and cook for 30 minutes.

    At this time, prepare the rest of the products according to the list. For 1.2-1.5 liters of water, I used two medium-sized potatoes, one carrot, half an onion and 2 tablespoons of corn groats.

    Peel potatoes, onions and carrots and rinse under running water.

    Cut the potatoes into small cubes, carrots into circles, and chop the onion not very large.

    After the head is cooked, remove it from the broth. Make the flame of the stove maximum. Put potatoes, carrots and onions in a saucepan. Next, add corn grits, bay leaf and salt to taste. Wait for the moment of boiling, reduce the flame to slightly below average and cook the soup until the potatoes are ready. It will take about 15-20 minutes, it depends on how large the pieces of potatoes you have and on the variety.

    While the soup is cooking, separate the pieces of meat from the head, if any. Remove the bones.

    Try the finished soup again with salt, if necessary, then add salt. Add finely chopped greens and pieces of fish to the pan. I used frozen dill and a mixture of Italian herbs.

Instead of corn groats in the recipe, you can use rice. It goes well with red fish and is well suited for such soups.

Since the soup is prepared without frying, it can be safely served on diet days. Due to cereals and rich broth, the soup perfectly satisfies hunger and saturates the body with useful substances.
