Step-by-step cooking

Cooking time: 2 h 40 min
  1. Step 1:

    Step 1.

How to fry pies in a dry frying pan? First of all, prepare the dough. How to make dough? Pour kefir at room temperature into a deep bowl, add salt and soda. If you did not have time to get it in advance, then warm the kefir on the stove or in the microwave. Kefir for making dough can be used of any fat content, I have 2.5%.

  2. Step 2:

    Step 2.

Pour in the sifted wheat flour. It is important to sift the flour to saturate it with oxygen. Then the dough will turn out to be airy and will rise well when frying.

  3. Step 3:

    Step 3.

Knead elastic and smooth dough. Wrap it in plastic wrap and put it away for a couple of hours (ideally overnight) in the refrigerator. If there is no kefir, then you can do without it, using potato broth, which will remain when cooking potatoes for filling. It will turn out a lean dough.

  4. Step 4:

    Step 4.

Prepare the filling. How to make the filling? Wash the potatoes, peel and boil until tender in salted water. Determine readiness with a sharp knife — it will easily pierce the pieces.

  5. Step 5:

    Step 5.

Drain the water, mash the potatoes into puree, add hot milk and butter. Heat the vegetable oil in a frying pan, fry the chopped onion in it until light blush. Put it in a bowl with mashed potatoes, add salt and ground black pepper to taste, mix. The filling for the pies is ready.

  6. Step 6:

    Step 6.

Take the rested dough out of the refrigerator, roll a long sausage out of the dough on a floured work surface, divide it into 12 pieces. Depending on the desired size of the pies, the number of pieces of dough can be increased or decreased.

  7. Step 7:

    Step 7.

Roll out each piece of dough with a rolling pin into a small cake no more than 0.3 cm thick. Place a tablespoon of warm potato filling in the center of each tortilla.

  8. Step 8:

    Step 8.

Fasten the edges of the pies, lay them seam down.

  9. Step 9:

    Step 9.

To prevent the pies from burning in a dry frying pan, heat it very hot. Put the blanks of the pies on a preheated frying pan. Fry them on one side over medium heat for about 3-4 minutes.

  10. Step 10:

    Step 10.

Then turn the pies over and let them brown on the other side. Cover the pan with a lid and keep the pies on the fire for about 5-7 minutes so that they are well fried inside, the dough should not remain moist.

  11. Step 11:

    Step 11.

Remove the finished pies on a plate and immediately brush with a piece of butter. Serve the pies warm to the table with tea, coffee or milk. Enjoy your meal!

Pies can be made completely lean if you knead the dough on potato broth, use it instead of milk for mashed potatoes. And exclude butter.

Be prepared for the fact that flour may need more or less than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!
