Chickpea flour hummus

In a small saucepan, combine chickpea flour and water (the water should be drinkable), mix well. It is desirable that the mixture turns out without lumps. We determine the consistency ourselves - hummus can be thinner or vice versa - thicker. We put a saucepan with the mixture on medium heat and, with constant stirring, bring the mixture to a boil. After the pan is immediately removed from the heat and let its contents cool down.

When the mixture cools down to room temperature, add tahini paste, paprika to it, pour in olive oil and lemon juice (freshly squeezed). Peel the garlic and cut it very finely with a knife or three on the smallest grater, or you can pass it through the press. Add garlic to the chickpea mixture. Pour the cumin powder and mix everything well with a blender.

Next, add salt to the mixture, mix again and taste. If necessary, add more salt. You can also adjust the flavors by adding more salt, lemon juice, garlic or ground cumin. you can also add some more spices at will. Also, if you want a thinner hummus structure, you can add a little more water. And again we whisk everything.

Preheat the pan over medium heat, pour sesame seeds into it and fry it. The pan should be dry, that is, fry without using any oil. Fry with constant stirring until lightly golden and fragrant.

We transfer the hummus into a beautiful container. Pour olive oil over the hummus, sprinkle with fried sesame seeds and a mixture of zaatar spices. However, you can decorate hummus to your taste, but you should definitely pour olive oil!

Serve hummus with freshly baked bread with a crispy crust. Or you can serve it with pita bread, pita chips or tortilla. Hummus with bread will be a great snack or a delicious and satisfying snack during the day.
