First I boil the potatoes, drain the broth and make mashed potatoes. I cool it completely. I add a large piece of butter, cream and salt. I beat the mixture with an electric mixer to get a very airy mass. I put it in the refrigerator and cool it a little. To make the dough more dense, I add flour to it and knead it until a smooth dough is obtained. Then I pinch off egg-sized pieces from the dough and roll out thin tortillas from each piece. Fry them in a preheated frying pan until brown for 2-3 minutes on each side. So that the cakes do not dry out, I lay parchment between them. I serve ready-made potato tortillas necessarily in a warm form together with butter, sprinkle them with sugar and cinnamon as well. Very tasty.
