This is a very simple and summer recipe for okroshka.

I tried a lot of different recipes from my friends, in cafes and canteens. But the most delicious, in my opinion, turned out to be at my mother's. There are no specific ingredients in it (olives, mushrooms, salted plums and the like), so many people will like this okroshka. Especially for those who have not tried it yet.

Also in this recipe I like to replace chicken with sausage, and fresh cucumbers with salted ones. In this case, it can be eaten in winter. But it is tastiest to eat it in the summer, as fresh okroshechka from the refrigerator is very refreshing in the unbearable heat. If you have a soul for certain ingredients, then you can add them to your taste without any remorse. You can also add various seasonings at your discretion, if you like a sharper or richer taste. Personally, my opinion is that meat pies are perfectly combined with okroshka, they perfectly emphasize the taste and give more saturation.

Wikipedia tells us that "the classic recipe for okroshka implies the use of kvass as a base. Kvass for okroshka should be a special, so-called white kvass, unsweetened, unlike ordinary bread. Kvass wort consists of rye flour, possibly with the addition of buckwheat and wheat, as well as various types of malt: rye, barley, buckwheat. The wort is fermented with a prepared starter, possibly with the addition of mint.", therefore, this recipe is one of the varieties of cold soup. But for simplicity, we will call it "okroshka".
