First of all, take a kilogram of cottage cheese and wipe it through cheesecloth so that there are no lumps left. Then beat the eggs in a mixer and mix the cottage cheese, eggs, sugar with sour cream and salt well. This is what we will need for the filling.
Now let's do the test itself. Half a kilo of flour should be mixed with milk, then beat well with a mixer, add 1 egg and 20 grams of sugar and beat again. The finished dough must be rolled out with a thickness of 1 mm into a square of 50 by 50 cm.
Let's go back to the filling again. From the resulting mass, make balls weighing about 15 grams and begin to lay them out on the dough with an interval of 3 cm between them. Do not forget to step back from the edge of the sheet 4 cm.
To start, put one strip of balls on the dough and cover them with the free edge of the dough. Press the upper layer to the lower layer with your hands, and cut out the finished dumplings from the common sheet in a semicircle. When you're done, put them in the refrigerator for at least half an hour.
In order to cook dumplings, dip them in boiling salted water and cook over low heat for about 7 minutes. As soon as they are ready, they will pop up. Take them out and immediately mix them with sour cream. You can optionally sprinkle the dumplings with sugar or powdered sugar. That's it, bon appetit!
