    Crush the garlic through a garlic press, I don't have it, I grated it on a fine grater, you can just finely chop it. Mix garlic, salt and spices into a homogeneous mush, you can add a little oil.

    Heat the frying pan well, I have a cast-iron grill pan, but there can be any one that roasts well and fits the size. Brush it with oil and lay out the chicken. Put something flat on top: a plate, a lid, a board, a frying pan, like mine. And deliver the cargo. It can be anything heavy: a heavy jar, a brick, a pot of water, as a child, my mother did with a manual meat grinder.

I was frying a fairly large carcass, it took about twenty-five minutes on each side. In the end, for peace of mind, I held it for about five minutes under the lid so that the breast was definitely fried. You can also put it in the oven for about five minutes. Therefore, it is best to take very small chickens for cooking this dish, they will have time to prepare during roasting.
Chicken is best served with fresh vegetables and herbs, but potatoes are also good as a side dish.
You can make a sauce for chicken: sour cream, yogurt or tomato.

Pierce the meat with a knife: if the knife enters easily and the light juice flows, then it is ready, if the juice is pink or red, you need to continue cooking.

Wash the meat, be sure to dry it with a paper towel, otherwise excessive moisture will not allow it to fry - it will stew.

Since the degree of salinity, sweetness, bitterness, sharpness, acid, burning is individual for everyone, always add spices, spices and seasonings, focusing on your taste! If you put some of the seasonings for the first time, then keep in mind that there are spices that it is especially important not to shift (for example, chili pepper).
