A lot of people know that horseradish seasoning is a native Russian food, but few people realize that what we eat is not quite Russian. In Russia, horseradish has been cooked since ancient times at the rate of 1-2 days of storage, after that it loses all its strength. And so that this does not happen and vinegar is added, so the seasoning is stored longer. But the real culinary recipe of Russian homemade horseradish does not contain vinegar, but only sugar and a little water.
I want to tell you a recipe for Siberian "horseradish", which can be stored in the refrigerator for 2-3 weeks. The most difficult thing is to peel and chop the horseradish itself. But there is a little secret here: wash the rhizomes under running water, carefully clean and freeze. It is better to scroll through the meat grinder frozen, so you will shed less tears, if you do not have time, then put a plastic bag on the meat grinder and pull it off with an elastic band. Tomatoes and garlic are also passed through a meat grinder. By the way, it's better to skip the horseradish last, it clogs the grate and winds up on the knife. Mix everything and add salt. The more horseradish and garlic you add, the longer the seasoning will stay in the refrigerator. When serving, add a little sour cream to it. Use with meat dishes.
