    Wash the tomatoes, make criss-cross incisions on them, put them in a bowl and pour boiling water. Leave them like this for a few minutes. Then peel. This procedure will make the skinning process easier and less burdensome. Cut the tomato pulp into small pieces.

    Wash the bell pepper, peel off the seeds and stalks and cut into small pieces.

    Peel and finely chop the garlic. You can use a press for this. Wash the parsley, dry it and chop it with a knife.

    Heat the vegetable oil in a frying pan and fry the bell pepper on it for about 3 minutes, stirring it with a spatula.

This summer in a Moscow restaurant I tried pasta with a very interesting vegetable gravy based on tomatoes, bell peppers and celery. I decided to repeat it at home, although there were no celery stalks at hand. It turns out much more fragrant with it. But this option is also interesting. In addition to these vegetables, onions and carrots can also be added to the gravy, but this is at the request of everyone.

When adding soy sauce to a dish, it is worth considering that it has a rather salty taste. Reduce the total amount of salt, otherwise you risk over-salting.

Tomatoes in this recipe can be replaced with ketchup, tomatoes in their own juice or tomato paste. Choose the proportions to your taste.
