Original, fragrant, spicy, delicious! Mititei in Moldavian are small meat sausages that look like cutlets, but differ in the composition of minced meat and the cooking process. They turn out to be more juicy and tender in taste, they are traditionally grilled, and at home — in a frying pan.

    How to make mititei in Moldovan? Prepare the products. Minced meat is usually taken mixed, pork and beef 1:1. But you can use it to your liking, from any kind of meat. Minced meat is suitable for both purchased and self-made. It is better to take corn starch, with it mititei turn out to be more tender.

    Put the minced meat in a bowl and add corn starch, salt, soda and ground black pepper to it.

    Peel and chop the garlic, add it to a bowl with minced meat. Garlic can be crushed in any convenient way: using a knife, a grater or a garlic press. Mix the mass until the products are evenly distributed.

    Pour the milk into the minced meat and mix well again. Milk can go from 60 to 100 ml, depending on the humidity of the minced meat itself. It is better to add milk to the minced meat in parts and look at the consistency: whether more is required.

    In order for the minced meat to become dense, it needs to be thoroughly beaten off. To do this, take a lump of minced meat in your hands, lift it over the bowl and throw it back. Do this about 15 times. This is an important moment! Thanks to this beating, the minced meat will be fried in dense sausages and will not fall apart. Cover the minced meat container with a lid or tighten with a film and refrigerate for at least 3 hours.

    Divide the prepared minced meat into equal parts and form sausages, about 7 centimeters long and 2-3 centimeters thick. To prevent the minced meat from sticking to your hands, moisten them periodically with cold water.

    Pour vegetable oil into a frying pan and heat it over medium heat. Transfer the mittens to the pan and fry them on all sides until golden brown. Remove the pan from the heat. Preheat the oven to 180 degrees.

    Peel the onion, cut it into half rings. Place the onion in a baking dish, spreading over the entire surface. Put the fried mititei on the onion.

    Add black pepper and bay leaf to the mold.

    Pour water into the mold so that it reaches the middle of the sausages.

    Put the mold in a preheated 180 degree oven and bake for 30 minutes. The time and temperature are indicated approximately — be guided by your technique. Mititei should be well browned on top.

    Take them out of the oven, put them together with the onions on plates and serve them to the table.
