Step-by-step cooking

Cooking time: 40 min
  1. Step 1:

    Step 1.

For this recipe, you will need a soft and tender fillet of beef. The success of the whole event will depend on the quality of the meat. So, we will wash the beef, dry it and cut it into small squares.

  2. Step 2:

    Step 2.

We put the beef in a bowl in which it will be marinated. Salt and pepper to taste. Add 2 tablespoons of soy sauce. Stir and set aside to marinate a little.

  3. Step 3:

    Step 3.

Wash the bell pepper and cut it into large squares. Ideally, take yellow, red and green bell peppers. In the finished dish, this trio will look perfect. I got a different kind of green pepper.

  4. Step 4:

    Step 4.

The onion must be peeled from the husk. You need to cut it as follows. We cut the onion in half, then each part into three parts and another three parts perpendicular. In total, each half will have nine approximately identical squares.

  5. Step 5:

    Step 5.

Cut the washed and peeled ginger root into small strips.

  6. Step 6:

    Step 6.

Peel the garlic and, flattening it with the flat side of the knife, finely chop it.

  7. Step 7:

    Step 7.

Let's start making the sauce. In a separate bowl, mix 1 tbsp.l of starch (both potato and corn will do), water, remaining soy sauce, rice vinegar (can be replaced with apple vinegar) and sugar, mix the sauce thoroughly until the sugar grains dissolve.

  8. Step 8:

    Step 8.

Now you need to roll the pieces of beef in starch. To do this, I pour starch into a regular plastic bag, add beef there and, tightly holding the bag, shake it, achieving uniform breading of all pieces of meat.

  9. Step 9:

    Step 9.

In a wok or in any other frying pan with high sides, heat sunflower oil over high heat. As soon as the oil is well warmed up, we spread the beef to fry.

  10. Step 10:

    Step 10.

Fry the meat until tender and put it on a paper napkin so that the excess oil is glass.

  11. Step 11:

    Step 11.

Pour a little sunflower oil into the pan again. Warm it up and spread it lightly fry the garlic and ginger root for a minute or two.

  12. Step 12:

    Step 12.

Add all the pepper and onion to the pan. Fry, stirring, for a few minutes, so that it softens a little. In Chinese cuisine, it is customary to fry vegetables not until they are fully cooked, but slightly so that all the vitamins remain in their places.

  13. Step 13:

    Step 13.

Add the pre-prepared sauce to the pan, bring the sauce to a boil. At this stage, the sauce should thicken. If necessary, you can add a little more salt to the dish to taste.

  14. Step 14:

    Step 14.

And in conclusion, we put the already slightly dried beef in a frying pan, mix everything thoroughly and let the meat warm up for a few minutes. Beef in sweet and sour sauce is ready!
