Pork in curry sauce

Cooking method

Cooking time: 1 h 50 min

Cut the meat into plates across the fibers 1 cm thick.

Season each piece of meat with salt and pepper.

Finely chop the cilantro.

Heat olive oil in a high frying pan or saucepan.

Put ginger and curry in the heated oil. Lightly fry, stirring constantly, over high heat, then reduce it to a minimum.

Pour in water, 3/4 coconut milk. Bring the sauce to a boil.

Add half of the cilantro and all the meat to the boiling sauce.

Bring it to a boil again, cover with a lid and simmer for 50 minutes over medium heat.

When the time has passed, turn down the heat and cook the meat on low heat without a lid until the excess liquid evaporates.

After adding the remaining coconut milk, cilantro, salt (if necessary). Stir and bring to a boil.

Ready-made pork in curry sauce is served with your favorite side dish.
