Turkey cutlets in the oven

Healthy, dietary, for the whole family, for dinner and for the second! Turkey cutlets in the oven are much more useful than fried in a frying pan — not a drop of oil is used when baking. The cutlets are soft, lush, very appetizing and delicious! Juiciness is achieved by adding grated zucchini.

Step-by-step cooking

Cooking time: 1 h
  1. Step 1:

    Step 1.

How to bake turkey cutlets in the oven? Prepare the ingredients. Minced meat can be used both ready-made and self-cooked. If it has been frozen, then pre-defrost it by transferring it from the freezer to the bottom shelf of the refrigerator. Choose a young, small zucchini — it is juicier and tastier. Instead of zucchini, you can take a raw potato.

  2. Step 2:

    Step 2.

Wash the squash, peel it, if the seeds are large in it, remove them. Grate the zucchini on a medium grater. You can grind it in a blender, pre-diced. If the squash is too juicy, you can squeeze it a little with your hands, but not too much so that the cutlets retain juiciness. Drain the extracted juice.

  3. Step 3:

    Step 3.

Melt the butter in any of the ways described at the end of the recipe. Cool it down.

  4. Step 4:

    Step 4.

Add zucchini, egg, melted butter, salt and pepper to the turkey mince. Peel the garlic and pass it through the press into the minced meat. Knead everything until smooth.

  5. Step 5:

    Step 5.

If necessary, if the minced meat turns out to be too liquid, you can add 1-2 tablespoons of semolina or breadcrumbs. I did so.

  6. Step 6:

    Step 6.

After adding semolina, knead the minced meat again thoroughly until smooth and leave for 20-25 minutes so that the semolina swells and absorbs excess moisture.

  7. Step 7:

    Step 7.

With wet hands, form medium-sized cutlets of any shape from minced meat, I made oblong ones. Cover the baking sheet with foil and grease it with vegetable oil. Put the cutlets on it at a small distance from each other. Bake the cutlets in a preheated 180 ° C oven for 30-40 minutes, until golden brown. Remove the finished cutlets from the oven and serve with any side dish. Bon appetit!

Any side dish will suit these lush juicy cutlets: buckwheat, rice, mashed potatoes, pasta.

To make the minced meat even more delicious, you can add a slice of white bread without a crust soaked in a small amount of milk.

As well as other vegetables to taste: potatoes grated on a fine grater, bell peppers crushed in a blender, etc.

The basis of turkey is protein, which is able to be easily absorbed in the body. Turkey brisket, which is used for stuffing into cutlets, contains more than 90% of this useful protein. But the fat on the breast is not harmful, on the contrary - it is very useful for digestion. It is based on this composition that turkey is prescribed in the diet even when any other meat is contraindicated. In addition to protein, turkey meat contains a huge amount of vitamins of groups A, B, C, E and PP. It also contains phosphorus, iron, magnesium and calcium in the proper amount. Almost 4% of the composition refers to carbohydrates and only 1.5% to fats. Vitamin B4 (choline) takes the lead in the composition of turkey, copper is among the trace elements, and sodium is among the macronutrients.

Butter can be melted in a microwave oven or in a water bath. How to melt butter in the microwave?  Cut the butter into small pieces and place it in a special container. To prevent the oil from splashing when heated, cover the oil vessel with a paper towel. The oil should be melted either at the lowest power or in defrosting mode. At first, five seconds will be enough. Next, if the butter has not melted yet, set it again for 5 seconds and start the microwave. Repeat the process several times until the desired result.
How to melt butter in a water bath? You will need two containers of different diameters. Pour water into a large one and put it on the stove. Place the smaller container on top so that it is submerged in water by about half. Put the sliced butter into it. Under the influence of boiling water, the oil will begin to melt. Stir the oil slightly to speed up the process. As soon as the pieces of oil are completely dissolved, remove the container from the stove.

Which zucchini will work best? Choose young fruits with tender skins. Wash them and peel them. It is not necessary to cut off a very thin skin. If you use more mature zucchini, cut off the rough peel and cut out the middle with the seeds.
