Arabic cookies Maamul

An easy-to-prepare recipe that everyone will love! This recipe was recommended to me by a friend after she stayed in Syria. I got ready and everyone liked it. Please note that you must have a special form for this recipe. I added her photo in the comments.

Cooking method

Cooking time: 2 h 40 min
Pour the semolina into a bowl, sift the flour there, mix the mixtures. Add the melted butter, pour in the vegetable oil, mix thoroughly with your hands. Then cover with cling film and leave for a day. During this time, mix the dough 3-4 times.
Dilute yeast in warm milk, add a little sugar and let it activate. Then add all the milk (warm) to the yeast, add salt and pour the mixture into the dough. Cover with a film and leave in the heat for an hour. During this time, the dough should rise.
Dates are crushed into a homogeneous mass in a meat grinder (without seeds), pour olive oil into them and, if there is, a teaspoon of rose water (if not, then it is not necessary). Stir well. Form balls from the mass.
Mix the chopped walnuts, honey, cinnamon separately.
Tear off pieces of more filling balls from the dough, form tortillas, put the filling in the center, collect the dough and pinch it so that a ball of dough with a filling inside turns out.
Now we put the ball of dough into the mold and push it inside, then we take out the cookies with a ribbed pattern.
Put the formed cookies on a baking sheet lined with parchment and bake in a preheated 180C oven for half an hour until browned. Once baked, remove and cool on the grill.
Cookies with nut filling are prepared in the same way. Arabic cookies Maamul can be powdered with powdered sugar and served with tea.
