Tsuiwan Mongolian noodles with meat and vegetables

Delicious hot consisting of homemade noodles with meat and vegetables! Cuiwan is considered a traditional dish of Mongolian cuisine. According to the composition and method of preparation, it resembles Uzbek lagman, Kazakh beshbarmak and our homemade noodles with chicken, as well as many other similar dishes that are prepared in different countries. Therefore, it will not be difficult to prepare this dish for those who have already prepared any of the above. But, like almost any dish, every housewife, even in the homeland of this dish, has her own recipe for cuiwan, with some differences.

    Prepare the ingredients according to the list. Let's start with cooking homemade noodles. There is no special feature in the preparation of the noodle dough. In a deep bowl, we drive a chicken egg, beat it with the addition of salt until a homogeneous mixture is obtained.

    Pour in cold clean water, a couple of tablespoons of vegetable oil, mix.

    Pour in the wheat sifted flour, knead the elastic dough.

    Knead it with your hands on a floured table until it stops sticking to your hands. Then put it back in the bowl, cover the bowl with a towel, leave the dough to rest for 20 minutes. It will become more obedient.

    Beef, fresh and young, is used as meat in a traditional dish. The meat is thoroughly washed, cut into small cubes or straws.

    A set of vegetables in cuiwan, as a rule, consists of carrots, onions, bell peppers and garlic, everything that perfectly complements and improves the taste of meat. Onions are cleaned, cut into cubes or feathers.

    Carrots are washed, cleaned and cut into thin strips or small cubes. Bulgarian pepper is washed, cut out the stalk with seeds, cut it into cubes or halves of rings. Peel the garlic from the husk and finely chop with a knife.

    We roll out the rested dough into a thin layer, lubricate it with vegetable oil and roll it not tightly into a roll. We boil this roll for a couple in a slow cooker or in a steamer for 20 minutes so that it does not spin during cooking.

    Pour vegetable oil into the pan, heat it up. Spread the cooked meat on the oil, fry it on medium heat for about 5 minutes, stirring constantly. Pour in the soy sauce, mix.

    Then add carrots and onions. Fry them together for about 5 more minutes.

    Add the remaining vegetables, salt and spices. Fry, stirring for another 5 minutes.

    Let the roll cool down a little and cut into wide strips – noodles.

    Pour in a glass of water, mix. Cover the pan with a lid and simmer for about 25 minutes. Then add the cooked noodles, mix and fry them together for another 5 minutes.
