I already posted the recipe last year pork with eggplant , but, as in many other cases, you can come up with many variations for each recipe. This time, in addition to pork, I decided to make the dish more meaty and added homemade minced pork and beef. Well, I replaced the cheese with tomato sauce. By the way, seasonings and garlic can not be added to it, but simply diluted with water, but with seasonings it turns out tastier.

Meat with eggplant can be cooked in different ways: you can remove the minced meat, leaving all the other ingredients. Increase the amount of pork tenderloin and cut it smaller and put it all together in a frying pan. It will turn out no less delicious. You can also add Bulgarian pepper cut into small pieces.

The finished dish can be sprinkled with chopped herbs - coriander or parsley.
