Kurnik on kefir and butter

A traditional cake worthy of a wedding celebration! Kurnik, cooked with kefir and butter, is a dish that will decorate the festive table. The combination of mushroom filling and chicken meat layered with pancakes will impress both relatives and guests.

Cooking method

In a deep bowl, where we will knead the dough, pour the melted butter and kefir. Add salt, sugar and mix well with a fork or whisk. In a separate bowl, combine the sifted flour with soda, mix and add in small portions to the kefir. Knead first with a fork, when the mass becomes thick enough, we continue kneading with our hands on the surface dusted with flour.

Wrap the dough in a film and leave it in a warm place for an hour. During this time, the dough will increase slightly in volume, become soft and pliable. While the dough is suitable, bake 4 unsweetened pancakes according to any recipe. In the future, they will be needed for layering the filling.

Finely chop the onion into cubes or half rings. Fry half of the chopped onion until golden brown in vegetable oil in a well-heated frying pan. Cut the mushrooms into arbitrary pieces, add to the meat, season with salt, ground pepper and fry until golden brown.

For the second filling, fry the rest of the onion in vegetable oil. Chicken fillet is cut into small cubes, sent to the onion and fried almost to readiness, seasoned with salt and ground pepper to taste. We transfer both fillings to separate plates.

Hard-boiled eggs, cooled in ice water. Peel from the shell and cut into a cup. Chop the green onions, add to the eggs, season with salt.

During the preparation of the fillings, the dough has already risen enough. Turn on the oven at 200 degrees to warm up and start assembling the chicken coop.

From the dough we pinch off a small piece for decoration. The rest of the dough is divided into 2 parts, one twice as large as the other. We roll out most of it in a layer of about 1 cm . We lubricate the baking dish with oil and put a round blank of dough into it, form high sides.

We put the pancake in the middle, spread the chicken and onion filling on top of it. Cover with a second pancake, spread the egg filling. Cover with a third pancake and spread the mushroom filling. We complete the process of laying out the filling with the fourth pancake.

Roll out the second part of the dough and cover all the layers of the filling. The side is beautifully folded. In the center we form a hole for the steam outlet. From the remaining dough, we cut out various decorations to taste: leaves, flowers, birds, etc. Decorate the pie.

Lubricate the chicken coop with beaten egg and send it to the oven for 45 minutes. As soon as the cooking process is completed, we take the chicken coop out of the oven and let it cool down a little in the mold. We serve it to the table in a warm form.
