Tortilla is a unleavened flatbread made of wheat flour, similar to the usual pita bread, often used in Mexico (and not only) instead of bread, and also serves as the basis for cooking other dishes, such as burritos, various casseroles.

    Let's prepare the filling. The meat (I have a pork shoulder, you can replace it with chicken or beef) must be pre-marinated, but first it needs to be cut into steaks, then into strips of approximately the same size. Put it in a bowl.

    Wash the lime and cut it in half. Squeeze the juice of half a lime on pork (you can replace it with the usual lemon). Add 2 tsp dry garlic and 0.5 tsp cumin if desired. Mix with your hands. Add 2 tablespoons of vegetable oil.

    Finely chop the burning red pepper, sprinkle with salt and chop again. Then mash the flat side of the knife into a puree. Add the crushed pepper along with the juice to the pork and mix well, make a so-called massage so that all the spices and pepper marinate the meat well.

    Peel the red onion and cut it in half. Then cut each half into slices. Wash the Bulgarian sweet pepper, cut in half, peel from the seeds and cut into these strips.

    Now let's make tortilla cakes. Put the dough bun on a surface dusted with flour. Make a sausage and divide the dough into 5 parts.

    Put one tortilla in a well-heated dry frying pan. Fry for about a minute on each side. Focus on the color of the tortilla. It should be pale with small toasted spots. If overexposed, the cake will become stale. I usually fry one tortilla, and at this time I roll out another. Very convenient.

    Put the finished cake on a sheet of foil. Do the same with the others. Cover the finished tortillas with a layer of foil so that they remain warm when serving.

    Pour 2 tablespoons of vegetable oil into the frying pan on which the tortillas were cooked and warm up well. Toss the chopped onion and sweet bell pepper. Fry on high heat, stirring constantly, so that the vegetables are appetiingly slightly burnt in places. Put it in any container.
