1. Heat the oil in a frying pan.
2. Break the eggs into the pan. If you like an omelet, first break the eggs into a bowl and whisk a little with salt, and then pour into a frying pan.
3. For scrambled eggs (omelet) pour out the frozen vegetables in an even layer. If desired, add salt to taste.
4. Cover the pan with a lid and cook for 5-7 minutes over medium heat.
Serve well on fresh bread or paired with a light salad.
