Zucchini-cottage cheese pancakes with oat flakes

The dish is easy to prepare and extremely tasty. Everyone tried zucchini pancakes, but I was pleasantly surprised at how quickly these delicate, airy, delicious zucchini-curd pancakes disappeared from the table. Now I'm doubling the amount of food needed to make them.

    As mentioned, I double the volume of ingredients, in the original recipe they are two times less. Wash the zucchini, peel, grate on a coarse grater. Put in a sieve, lightly add salt. Leave for a few minutes.

    In a bowl, break the eggs, put the cottage cheese and oat flakes. Flakes should not be taken quickly, but also not too coarse. If the flakes are large, you can slightly grind them in a blender using a pulsating method.

    Thoroughly grind and mix everything. You can, of course, use an immersion blender, but it's better manually.

    Squeeze out the zucchini, add to the dough, send flour, pepper, salt to the same place (take into account that the zucchini was salted). If desired, you can add a little sugar. Knead until the dough is homogeneous.

    Heat the frying pan well with vegetable oil. Almost at maximum heat, pour the dough, fry on one side until browning, turn down the temperature, turn over and fry under the lid until ready. The next portion is cooked according to the same scheme :)
