To start, cut the eggplant into cubes, add salt and leave for 15-20 minutes. Dip the tomatoes in boiling water, hold there for about a minute, then remove the skin from them, and chop the tomatoes themselves finely. Wash and peel the potatoes, cut them into cubes. Chop the pepper and onion coarsely, fry them for 2-3 minutes in a saucepan, in vegetable oil. Add tomatoes there, and simmer for a little more than 10 minutes.

Squeeze the eggplant either manually or with a special press to remove excess bitterness. Fry them in vegetable oil in a frying pan. Then put the fried eggplants aside, and fry the potatoes almost until tender. Finely chop the garlic and herbs. Add the potatoes to the fried onions, peppers and tomatoes. Then add the eggplant and herbs, season with salt and pepper. As needed, add a little water, simmer for 10-12 minutes.
