Salad "Mother-in-law's tongue", probably it is more correct to call it a snack, just disposes to creativity. I have already found at least 5 different recipes. I thought-I thought – and I came up with it. I looked at what restaurants offer. So, we are considering a basic culinary recipe. So to speak, the necessary minimum. This is the easiest and fastest way to prepare a spicy snack. Fans of the pronounced taste of garlic in food will like it.
So, we need to cut eggplants lengthwise into plastics. This is our form of tongues. Salt them on both sides. After ten minutes, shake off or blot the moisture that has emerged from the salt and fry in vegetable oil until golden on each side. Let the oil drain (for example, by spreading them on a paper towel).
Chop the garlic in a garlic press and mix with mayonnaise.
Tomatoes are also cut into round plastics.
Now we spread a little mayonnaise with garlic on the half of the eggplant tongue, cover the mayonnaise with tomato plastic, put a sprig of dill and cover with the second (free) half of the same tongue. We fix it with a toothpick. All the tongues rolled up in this way are laid out in a slide on a dish. Sometimes they are rolled up. Then, tomatoes can be cut into slices.
Now about the variations. Eggplants are sometimes fried in batter, which certainly changes the appearance of the dish, since the edge of the tongue ceases to be a characteristic black color. Sometimes the mass for greasing contains a paste of ground walnuts and garlic or mayonnaise, garlic and melted or hard cheese. You can add a ring of bell pepper to the tomato.
