We start cooking by thoroughly washing the fish under running water, then blot out excess moisture with paper towels. The fish should not be very wet.

Remove the husk from the onion, rinse it under cool water, dry it with napkins, and then cut the onion into slices.

We put the frying pan on medium heat, put butter in it and heat it well, completely melt it. Put the onion in the preheated oil, fry it until light golden and soft. do not forget to stir in the process so that the onion does not burn and does not spoil the dish with this.

Next, pour dry white wine into a frying pan with onions, bring the contents of the pan to a boil, and then pour fish broth into it. If there is no broth, it can be replaced with ordinary water. Chicken broth is also often used for such dishes.

Bring the mixture to a boil again. When this happens, add mustard to the pan, and also spread sour cream. By the way, sour cream can be taken of any fat content. The lower the fat content, the less caloric and light the dish will be in the end. Reduce the heat and warm up the mixture over low heat, stirring from time to time. It is necessary that the sauce becomes very creamy, fairly homogeneous, appetizing in appearance.

Now it's time for the fish steak. We put it in a frying pan, cover it tightly with a lid and stew the fish for 8-10 minutes. When this time has passed, we remove the lid and season the almost finished dish with salt and ground black pepper (if it is freshly ground, the finished dish will turn out especially fragrant and delicious).

The steak is ready!That's so fast and easy! We spread it on a beautiful serving plate, decorate with sprigs of fresh parsley and lemon slices. You can also pour lemon juice on the fish - in this matter we focus on personal preferences. We serve the fish to the table until it has cooled down.
