Incredibly delicious, light, simple, for every day! We bake gray bread in the oven from wheat and rye flour in a ratio of 3:1. There are no eggs and dairy products in it - it is completely lean, on water and yeast. The dough is kneaded very easily, any beginner can handle it!

    How to bake grey bread in the oven? Prepare the products for baking bread. Yeast can be taken fresh, then they will need 20 grams. If you take fresh yeast, then before adding it to the brew, dilute them in warm water, on which it is kneaded.

    First prepare the sourdough. It is necessary for the activation of yeast. In addition, the dough on the sponge rises better in the future. To prepare it, take a bowl and put sugar, yeast, a couple of spoons of flour in it. Fill the products with 100 ml of warm water, mix well until the lumps disappear. Cover the bowl with a sponge with a towel and leave for 15-20 minutes. Why should the water be warm? Warm water is the best medium for yeast activation.

    After the prescribed time, the sourdough should bubble up and rise slightly. This means that the yeast has woken up and started its work. If this does not happen, you need to start all over again with other yeast.

    Add the remaining warm water, 150 ml, salt and vegetable oil to the sponge. Mix it up.

    Sift both types of flour into the same place. For gray bread, we take 2 parts of wheat flour and 1 part of rye. When sifting, the flour is enriched with air, which will make your bread fluffy and soft. Please note that you may take more or less flour than I do. Be guided by the consistency of the dough.

    And then knead it with your hands. You can do this with a mixer, but I don't see the need for this. The dough is perfectly kneaded by hand, it will quickly become smooth, but at the same time it will remain very sticky. Do not rush to add flour. Sticky, soft dough and bread will make soft. The dough clogged with flour will lead to a hard, tasteless bread. Gather the dough into a ball. Cover the bowl with the dough with a towel and put it away in a warm place for 30 minutes.

    After about 30 minutes, the dough will double in volume.

    Put the dough on a board sprinkled with flour and knead it a little. Then assemble the dough into a ball, gathering the edges in the center. Round the workpiece in a circular motion.

    Transfer the ball of dough to a baking sheet covered with baking paper. Cover the dough with a towel and leave to come up again for about 30 minutes. During this time, the loaf will increase in size a little more. You can make incisions on top of it with a blade or a sharp knife.

    Preheat the oven to 180-200 °C, top-bottom mode. Bake the bread for about 20-40 minutes. Determine the exact time and temperature of baking according to your oven. The bread should be well browned on top. Cool the finished gray bread on the grill.

A very successful recipe! It took at most 10 minutes for the clean work of making bread. The bread turned out to be very soft with a ruddy crispy crust.

I repeat that it is not necessary to add extra flour, let the dough be sticky.

If you want to get whiter bread, then take more wheat flour. If more black, then rye.

Part of wheat flour can be replaced with whole grain or first grade.
