    Prepare the ingredients for the Ossetian pie according to the list. Let's start with the preparation of yeast dough. We will knead the dough with milk so that it turns out to be especially soft and obedient. Pour a glass of warm milk into a bowl. Add sugar and a tablespoon of wheat flour, mix until a homogeneous mixture is formed. Pour in the dry yeast, mix again and leave the mixture in a warm place for 15 minutes.

    Yeast foam should form on the surface of the mixture, which means that the yeast has been activated, everything has been done correctly. In a bowl with yeast mixture, add salt and pour vegetable oil. Mix it up. Pour the sifted wheat flour in parts.

    Mix the dough with a spoon, then put the dough on the table, sprinkled with flour. Knead the elastic dough, slightly sticking to the palms. Put the dough in a bowl, tighten the bowl with cling film and put it in a warm place for an hour to rise.

    While the dough is standing, we will make the filling for the pie.

    Potatoes are washed, cleaned and cut into several large pieces. Put the potatoes in a saucepan, fill with water. We put it on fire. Add a pinch of salt. Boil the potatoes until tender. Part of the water in which the potatoes were cooked is drained. We make mashed potatoes from potatoes, add butter. Let the mashed potatoes cool down a little.

    Chop or grate the cheese and send it to a bowl with mashed potatoes, mix, you can add a little fresh finely chopped dill and parsley for flavor. To taste, add salt and ground black pepper, mix, the filling is ready. If desired, you can also add other varieties of cheese, for example, hard, it will make the filling even more fragrant and tastier.

    Knead the dough and proceed to forming the pie. We divide the dough into several parts depending on the size of the mold and the desired number of pies. Part of the dough is rolled into a thin cake. We put the filling in the center. We fasten the edges of the tortilla to make a bun. It is again carefully, so as not to tear the dough, roll out with a rolling pin into a thin cake.

    Put the cake blank in a greased form. In the center we make a hole for the steam outlet. Bake the pie at a temperature of 200 degrees for about 25 minutes. We determine the exact time and temperature of baking by our oven.
