    We immediately warm up kefir, the percentage of fat content does not play a special role, I used 2, 5%. If it is not very fresh, there is nothing wrong with that, on the contrary, on sour kefir, the dough will turn out more lush and airy. In a deep bowl, pour dry yeast, sugar, salt.

    Pour the dry ingredients with warm kefir and immediately pour in the vegetable oil, mix the mixture and leave it on the table while sifting wheat flour. This step is important, it is advisable to sift the flour twice in order to better saturate it with oxygen, which contributes to a better rise of the dough.

    Pour wheat flour into a bowl with liquid, it should be done in parts, adding flour as needed after each kneading with a spoon, so as not to clog the dough with flour. When it becomes difficult to work with a spoon, spread the dough on a floured work surface and continue kneading until the dough stops sticking to your hands. Unlike shortbread dough, yeast likes hands, so you need to knead it as long as possible.

    Roll the dough into a ball and put it back in the bowl. The bowl with the dough is covered with cling film. We leave it for half an hour in a warm place, in winter it can be a radiator, we put the bowl next to the battery, but not tightly, so that the dough does not bake, and the yeast in the dough does not die from overheating.

    We crumble the finished dough, roll it into a sausage and divide it into 12 pieces, depending on the desired size of the pies.

    Roll out each piece into a small cake, put a little filling in the center. I have already prepared the filling in advance. You can quickly make an apple filling from peeled and finely chopped fresh apples steamed with sugar. Or use another one at your discretion.

Grease the pies with beaten chicken egg and send them to a preheated 180 degree oven for 30 minutes.
